Healthy Spring Soup

It’s Sunday afternoon and instead of being filled with creative fire I’m thinking about a nap. Then I realized I could do that and still give something to readers by sharing this wonderful, quick, and easy recipe I saw on one of my favorite blogs- Pink of Perfection.



It is a great recipe for when you really don’t want to cook but are pretty sure a trip to BK in your jammies (it’s not like I have to get out of the car!) is not the best answer. In fact, it’s low fat and crazy healthy with spinach, tomatoes, and lentils. But don’t let that scare you off, it is warming and bright and fresh (thanks to the lemon). Almost makes you believe that spring will come to Portland before July….
